Eratap Beach Resort is Vanuatu’s newest and most luxurious small resort. Set on a stunning peninsula with three white sand beaches and surrounded by lush coastal forests and pristine coral reefs - it is truly a unique tropical getaway.
The resort opened in November 2007 and Fiona Gillanders was brought over from Brisbane to take charge of Eratap’s restaurant.
Fiona had previously lived and worked in Vanuatu 6 years ago and helped put Chantilly’s on the dining map.
The lure of the next big challenge was what enticed her back to Vanuatu after a 3 year hiatus in Brisbane.
"It was the challenge of creating a top class restaurant in the middle of the bush and to be a part of Vanuatu’s first luxury resort that appealed so much to me" she says.
"That and the local ni-Vanuatu people whom I had built such a strong rapport with the last time I lived and worked in Port Vila"
In just over 12 months Eratap has established itself as one of the top resorts and restaurants in Vanuatu.
As Head Chef at Eratap, Fiona has worked her magic to create a menu filled with delicious fresh choices such as the Sumac dusted lamb rack and one of her specialities – Morrocan wahoo, preserved lemon cus cus and tzatziki.
Eratap is open to the public but only for lunch and dinner and bookings are essential.
