At breakfast from 7:00am daily you’ll find big plates of bacon, eggs, sausage and hash browns beside French Toast and tropical fruit salad. Lunch offers light spring rolls, mezze plates, salads that might combine succulent prawns with fragrant mangoes or paw paw spiked with tropical excitement plus the temptations of expertly made fish and chips, pasta dishes, toasted sandwiches or outstanding hamburgers.
Dinner is heavenly for gourmet palates. After gorgeous tropical cocktails on the pool terrace, you’ll find Mangoes famed seafood platter including lobster, and choices including salt and pepper squid, freshly caught fish and prawn dishes or a tasty curry.
And Santo beef, always. Vanuatu’s unique, exclusively grass-fed Santo beef is so famed for its meaty flavour that Australia and New Zealand are begging for exports – and here it is expertly cooked and presented.
